In this blog, I am sharing a healthy cake recipe. A sugar free cake recipe. In this cake recipe I have used jaggery instead of sugar and wheat flour instead of plain flour/ maida. This cake is healthy as well as tasty like a regular cake recipe.

Ingredients
Wheat Flour 2 cups
Jaggery Powder 1 cup
Eggs 2 large
Oil 3/4 cup
Vanilla Essence 1 tsp
Baking Powder 1 tsp
Baking Powder 1/2 tsp
Milk 1 1/2 cups
Chopped Cashew Nuts 1/4 cup
Raisins 1/4 cup
Chopped Almond 1/4 cup
Chopped Walnuts 1/4 cup
Directions
- In a bowl, pour the oil and add the jaggery powder/ shards. Mix well. Then add the eggs, one at a time. Whisk well till the jaggery dissolves.
- To the jaggery-egg mixture, add the wheat flour, baking poweder and baking soda. Fold in the dry ingredients, till well incorporated.
- Now add the milk in batches to get smooth liduidy cake batter. Add half of the milk, whisk well. Then add the other half of the milk and mix well.
- To the cake batter, add 1 tsp of vanilla essence. Mix. Also add, half of the chopped dry fruits and mix the batter well.
- Grease a medium sized cake mould with butter/ oil. Line the mould with butter paper. Pour the cake batter into the cake mould and garnish with the remaining chopped dry fruits.
- Bake the cake in a pre-heated oven at 180° C for 35-40 minutes or till the skewer comes out clean when inserted into the cake.

Notes
- The cake can also be baked on gas cooktop. Place a heavy bottom pot over the gas stove, inside the pot place a wire stand. Cover the pot with a lid. Pre-heat for 10 minutes at high flame. Then place the cake mould inside, cover the pot with the lid and bake at the lowest flame for 35-40 minutes or till the skewer comes out clean.
