We all know that carrots are very healthy and should be added in our diet but it is also true that we rarely have carrots. When I was a child I hated to have carrots except when my maa made some delicious Gajar ka Halwa. Even today many of us may not like carrots but here’s a delicious recipe which will help you love carrots I believe. In this blog I will be sharing the recipe of carrot cupcakes which I follow to bake some delicious cupcakes.

Ingredients
Plain Flour / Maida: 1 1/2 Cup
Sugar : 1/4 Cup
Grated Carrots: 1 Cup
Egg: 1
Vanilla Essence: 1 Tsp
Cinnamon Powder: 1/2 Tsp
Baking Powder: 1 Tsp
Baking Soda: 1/2 Tsp
Salt: 1/2 Tsp
Milk: 1/2 Cup
Oil : 1/4 Cup
Raisins: 1/4 Cup
Directions
- In a bowl, take the oil and sugar, whisk well till the sugar dissolves. Now add the egg to it and whisk till the egg becomes fluffy and pale.
- To the oil-sugar-egg mixture, add the vanilla essence and mix. Then add the sifted maida/ plain flour, baking powder, baking soda, cinnamon powder and salt and mix. Then add the milk and fold in to get a smooth batter.
- To the batter, add grated carrots and raisins and mix well. Batter for the carrot cupcake is ready.
- Line the cupcake tray and pour in some cupcake batter and bake them in a pre-heated oven for 30 minutes at 180 C. Before serving the cupcakes let them cool completely.
I decorated the cupcakes using melted white chocolate and some sugar sprinkles.
