Mango season has almost come to an end and we’ll be able to have the delicious mangoes, next summer season. So here’s a recipe for all the mango lovers ! Mango Cupcakes. So delicious and tasty that’ll you’ll love it like anything. The cupcakes are rich in mango flavor and are very spongy too.

Ingredients
Maida/ Plain Flour 1 1/45 cups
Powdered Brown Sugar/ Sugar 1/4 cup
Eggs 2
Baking Powder 1 tsp
Baking Soda 1/2 tsp
Mango / Vanilla Essence 1/2 tsp
Mango Puree 1 cup
Mango Cubes 1/2 cup
Oil 1/4 cup
Milk 1/4 cup + 100 ml ( Chilled )
Whipping Cream Powder 100g
Piping Bag 2
Star Tip Nozzel 1
Directions
- For the Cupcakes: In a bowl, add powdered sugar and eggs. Whisk till well incorporated. Add mango essence/ vanilla essence. Mix. Then add the plain flour and 1/4 cup of milk in batches. Fold in the ingredients till well incorporated.
- Then add baking powder, baking soda and oil to the batter and mix well. To the batter now add 4 tbsp of mango puree and mix. Then fold in the mango cubes. Cupcakes batter is now ready.
- Pour the batter in lined cupcake tray and bake the cupcakes in a pre-heated oven at 180°C for 20-25 minutes. Once baked, let the cupcakes cool completely before frosting.
- For the Frosting: In bowl, add whipping cream powder and add 100 ml of chilled milk. Mix. Now whisk the liquid mixture till the volume doubles and you get soft peaks.Now add 2 tbsp of mango puree and mix.
- Once done put the whipped cream into the piping bag with star tip nozzel. Keep the Whipped cream into the fridge for 20 minutes. Then frost the cupcakes by piping rosettes. Further decorate the cupcakes with remaining mango puree. Serve the mango cupcakes.
