Preparation Time: 30 minutes
Cooking Time: 30 minutes
Serves: 2
Course: Main Course
Cuisine: Italian
Ingredients:
Penne Pasta 3 cups
Milk 2 cups
Plain Flour 2 tbsp
Butter 2 tbsp
Chopped Garlic 50g
Mix Dried Herbs 2 tbsp
Black Pepper Powder 1 tsp
Boneless Chicken 200g
Capsicum Juliennes 1/2 cup
Boiled Sweet Corns 1/4 cup
Salt to Taste
Grated cheese (of your choice). 1/2 cup
Water as Required
Oil 1 tbsp
Directions:
- Wash and pat dry the chicken. Now cut the chicken into small chunks and sprinkle salt and pepper into it. Mix well and keep it aside.
- Now let us make the white sauce for the pasta. Heat a pot on low heat, add 25g of butter to it, then add the plain flour to the butter and roast well. Cook till the rawness of the flour is gone. Now slowly add the milk to the pot while continuously stirring to get lump free sauce. Cook the milk on low heat till it becomes thick. Once the sauce becomes thick, add mixed herbs, black pepper powder, 1/4th cup of grated cheese and salt accordingly as the cheese is already salty. Mix well and keep it aside.
- Time to cook the pasta. Boil 6-7 cups of water in a pot, once the water comes to rolling boil, add the penne pasta to the water. Also add a pinch of salt. Cook the pasta as instructed in the packet. I used Durum Wheat Penne Pasta so I cooked it for 12-15 minutes. Once done, strain the pasta using a strain. Then pour 1 tbsp of oil and toss the pasta. This prevents them from sticking.
- Now heat a deep pan on low heat, add the remaining butter to it. Now cook the chicken till soft, then remove it from the pan and keep it aside. In the same pot, saute the capsicum and boiled sweet corns with chopped garlic. Now add the cooked sauce to the veggies, mix well. Then add the cooked pasta and cooked chicken to it. Season with more salt if needed. Cook for sometime and once done serve the white sauce chicken pasta hot, garnished with remaining 1/4th cup of grated cheese.
