PALAK PURI/ SPINACH PURI

Palak Puri is a healthier version of a usual puri. Palak Puri is usually made during special occasions. It can be eaten as it is or served with any vegetable curry. To bring a change in the usual taste one can definitely try this recipe.

Ingredients:

Palak/ Fresh Spinach                                                   250g

Whole Wheat Flour                                                     1 ¼ cups

Ginger                                                                           1 inch

Green Chili                                                                    1 large

Carom Seeds                                                                1 tsp

Salt to taste

Refined Oil as required

Directions:

  1. Put the palak/ spinach in a grinder jar; add ginger and green chili to it. Blend to get a thick paste. Keep the paste aside.
  2. In a bowl, take the wheat flour, add 2 tbsp of refined oil and mix well by rubbing it between your palms to get a crumbly structure. Then add some salt, carom seeds and the palak/ spinach paste and knead to get soft dough. Add 1-2 tbsp of water to knead the dough if required. Keep the dough covered with a damp cloth for 5 minutes.
  3. After five minutes, apply some oil on your palms; take small portion of the dough to make tiny balls. Roll the dough into your palms and form fine balls. Balls can be the size of a ping pong ball.
  4. Once the dough balls are ready, apply some oil on the rolling pin and work top on which you’ll roll out the puri.
  5. Place the dough ball on flat surface and press lightly with your palm and start rolling by applying little pressure on the dough ball. Once the dough ball elongates, turn it to 90⁰ angle. Repeat this process till you get a round shape of your desired size. Usually puris are of 3-4 inch diameter.
  6. Keep the puris on a greased plate till all the puris are rolled out.
  7. In a deep frying pan heat oil to deep fry the puri. Heat the oil in medium heat. Once the oil is hot, slowly slide the rolled out puris into the oil one by one. At a time two puris can be fried. Splash the hot oil over the puris to get nice puffed puris.
  8. Serve the puris hot as it is or with vegetable curry like Aaloo Jhor or Aaloo Chana Jhor.

Tips:

If you are unable to roll out perfect round puris NO WORRIES. I’ve got a trick. Take the dough ball and roll out the dough. Then take a sharp edge cap of a jar and press it over the rolled dough. Viola! There’s a round puri. Remove the excess dough and put it back in the remaining dough.
