Recently I got an order for simple Birthday sponge cake for which I baked Vanilla Chocolate Sponge Cake. It’s recipe is very easy because it’s made out of single cake batter with two different flavors. In this blog, I will be sharing the recipe of Vanilla-Chocolate Sponge Cake.

Ingredients
Plain Flour/ Maida 2 1/2 cups
Sugar 1/2 cup
Eggs 6
Cocoa Powder 4 tbsp
Oil 1/2cup
Milk 1/4 cup
Vanilla Essence 2 tsp
Baking Powder 1 1/2 tsp
Baking Soda 1 tsp
Salt 1 tsp
Directions
- In a bowl, crack all the eggs, add sugar to the eggs. Place the bowl over a sauce pan with hot water and whisk well till the suagr dissolves and the eggs turn fluffy and pale.
- Remove the bowl from the pan and now let’s add the dry ingredients to the whisked eggs and sugar mixture. Sift palin flour/ maida, baking powder, baking soda and salt. Fold in the dry ingredients gently. Then add the oil and vanilla essence. Mix well.
- Divide the cake batter into two equal parts. In one part add the cocoa powder and mix. Then add the milk to adjust the consistency and mix well. Chocolate cake batter is ready.
- Take a lined round cake pan. Using a ladel pour the cake batters simultaneously. Starting with chocolate cake batter then vanilla cake batter. Repeat till all the cake batter is over. Double tap the pan. You can use a toothpick to make beautiful patterns.
- Bake the cake in a pre-heated oven at 180°C for 35-40 minutes or till the toothpick comes out clean when poked in the centre of the cake. Once baked let it cool on a cooling rack and cut into slices and serve. i like to have ice-cream with sponge cakes.
