Sweet and sour tamarind chutney or Imli chutney is a famous Indian sauce made using Tamarind pulp, jaggery and some spices. Tamarind Chutney is an Indian condiment used to make all sorts of chat, served along with samosas, aaloo chops and veg cutlets too. In this blog I will share the quick and easy recipe of tamarind chutney.

Ingredients:
Dry Tamarind 2 cups
Jaggery 1 ½ cup
Water ½ cup
Red Chili powder 1 tsp
Fennel Seeds Powder 1 tsp
Salt ½ tsp
Oil 2 tbsp
Boiling Water 2 cups
Directions:
- Wash the dry tamarind pulp with cold water. Soak the washed tamarind pulp in hot water for 10-15 minutes.
- Take the soaked tamarinds and mash well in the soaked water itself. Strain the water using the strainer.
- Heat a saucepan on medium low flame. Once the pan heats up, add oil and let it heat.
- To the hot oil add the fennel seed powder and red chili powder. Then add the Tamarind water. Mix well. Also add the cold water.
- Bring the tamarind water to boil, and then add jaggery and salt. Cook till jaggery melts and the sauce become thick.
- Once the tamarind chutney becomes thick, remove it from the heat and let it cool. Use the chutney as required.
Chutney can be used to make various types of chats and dahi vadas. It can also be served with samosas, Aaloo chops, Veg Cutlets etc.
