ALOO CHOP/POTATO FRITTERS

Aloo Chop is one of the most famous Indian snacks. It is also one of the most popular street snacks. It is made up of boiled potato with spices mix, shaped into a cutlet, dipped into gram flour solution and deep fried in oil. It is a vegetarian snacks favourite of almost all. In this blog I’ll be sharing the recipe of Aloo Chop which i got from my mother.

Ingredients:

Boiled Potatoes 5 large

Chopped Onions 1/2 cup

Chopped Ginger 1 tbsp

Chopped Garlic 1 tbsp

Chopped Green Chilies 1 tbsp

Chopped Coriander Leaves 1/4 cup

Besan/ Gram Flour 2 cups

Red Chili Powder 2 tsp

Turmeric Powder 2 tsp

Chat Masala 2-3 tsp

Carom Seeds/ Ajwain 1 tsp

Soda Bicarbonate 1/2 tsp

Salt to Taste

Oil to fry

Water as required

Directions:

1. Mash the boiled potatoes till all lumps are gone. Heat 2 tbsp of oil in a frying pan, add carom seeds to the oil and let it crackle. Then add the chopped chilies, ginger and garlic, fry for 30 seconds. Now add the chopped onions into it and stir fry till golden brown. To this add 1 tsp of turmeric powder.

2. To this fried spice mix, add mashed potato, mix well and fry for at least 4 minutes. Also add the chopped coriander leaves into the potato mixture. Take out the potato mixture in bowl to cool it down. Once the potato mix gets cooled down, add the chat masala to it and mix well. Keep it aside.

3. Take a deep bowl, put the gram flour into it, add remaining turmeric powder, red chili powder, soda bicarbonate and mix well. Now slowly add cold water to it and whisk well to get a thick batter. The flour batter will be used to dip the potato chops therefore the batter must not be too thin. Whisk well till the batter gets lumpfree.

4. Take the potato mixture. To make the chop/ cutlets, take small portions of the mixture, roll it on your palm to make small ball and then flaten a bit with other palm to get flat chops. Keep it aside, one may get around 12 chops/ cutlets.

5. Heat oil in a frying pan to deep fry the chops. Once the oil gets heated, dip the potato chops in the flour batter, coat it well and deep fry it in the hot oil. Fry 3-4 chops in one go and keep the flame on the medium heat. Fry the chops till they get golden brown on both the sides.

6. Take out the fried aloo chops on the kitchen towel to soak excess oil. Serve the aloo chops hot with green chutney or tomato ketchup.
