CHILKA ROTI/ RICE CREPES

Chilka roti or rice crepe is a staple dish of almost all the tribal families in Jharkhand. As rice is a staple food in eastern India too, most of the Jharkhandi cuisine involves the use of rice in the dishes. The name Chilka Roti means Peeling like Chapatti. The rice chapatti is having a peeling like thin side hence it is known as Chilka Roti.

Ingredients:

Arwa Rice/ Idli Rice                                                                        150g

Water as required

Sugar                                                                                                 2 tbsp

Cumin Seeds                                                                                    1 tsp

Salt as per taste

Oil as required

Directions:

  1. Wash the rice thoroughly. Soak the rice for 1 hour and keep it aside.
  2. After an hour grind the rice in the mixer adding little water. The batter should not be too runny.
  3. Add sugar, salt and cumin seeds to the batter and mix till well incorporated.
  4. Heat a tawa/ frying pan on medium flame.
  5. Brush little oil on the tawa and with a ladle pour the batter on the tawa.
  6.  Spread the batter with the bottom of the ladle or hold the handle of the tawa and move it in a circular motion to get a round chapatti.
  7. Sprinkle little oil on the sides and top of the chapatti. Cover the tawa with the lid. Covering with the lid helps the chapatti get cooked by the steam.
  8. After a minute or so remove the lid and with the help of a spatula turn over the chapatti to cook it on the other side.
  9. Cook the chapatti till crispy.
    Serve it hot with aaloo jhor/ potato curry.
