DHUSKA/ DHOOSKA/ DUSHKA

Dhuska or Dhooska or Dushka is a popular deep fried street food snack eaten all over the state of Jharkhand. It is a savory dish served with any sauce or chutney or Aaloo ki sabzi or Potatoes curry. When you are at home on the weekends and prefer to eat something savory for snacks, I would suggest to try out Dhuska.

Ingredients:

Arwa rice/ Idli rice                                                                   100g

Split Bengal Gram / Chana Dal                                                60g

Split Black Gram/ Urad Dal                                                       50g  

Cumin Seeds                                                                                 ¼ tsp

Turmeric Powder (Optional)                                                     ½ tsp

Red Chili Powder/ Green Chilies                                               As per taste

Baking Soda                                                                                    ¼ tsp

Salt to taste

Water as required

Oil for frying

Directions:

  1. Thoroughly wash the rice, chana dal and urad dal. Then in a bowl soak the three together in water for two hours or so.         
  2. After two hours rinse off the water and blend soaked rice, chana dal and urad dal to form a thick fine paste of running consistency. One can adjust the consistency by adding little water as required.
  3. Let the batter sit for some time.
  4. Add cumin seeds, turmeric powder, red chili powder or finely chopped green chilies, baking soda and salt as per taste to the batter. Mix well till incorporated.
  5. Keep aside then heat oil in a deep frying pan/ kadhai.
  6. With the help of a small ladle pour the batter into the hot oil to form round shaped bread and fry them till golden brown on both the sides
  7. Serve it hot with potatoes curry or any chutney of your liking. It is popularly served with spicy coriander chutney and sweet-salty tomatoes sauce.
