SIMPLE VANILLA CAKE FROSTED WITH MILK CHOCOLATE GLAZE

Everyone loves cakes ! Right ? My parents love simple vanilla cake more than any other cake variant. In this blog I will be sharing the recipe of vanilla cake which I follow to get spongy and soft simple vanilla cake. I have frosted/ decorated the cake with melted milk chocolate glaze and sugar pearls.

Ingredients

  • Plain Flour/Maida: 1 1/2 Cup

  • Powdered Sugar: 1/4 Cup

  • Eggs: 3

  • Butter: 100g + 2 Tbsp

  • Baking Powder: 1 1/2 Tsp

  • Baking Soda: 1 Tsp

  • Vanilla Essence: 1 Tsp

  • Salt: 1/2 Tsp

  • Milk Chocolate: 200g

  • Sugar Pearls: 1 Tbsp

Directions

  • In a large bowl, sift all the dry ingredients together i.e. flour, baking powder, baking soda and salt. Sift at least twice to remove any lump. Keep it aside.
  • In another bowl take the butter at room temperature. Beat/ whisk the butter for few minutes. Then add the powdered sugar and whisk till sugar dissolves and butter becomes pale and fluffy
  • To the whisked butter-sugar, add the eggs one by one. Add one egg and beat/ whisk the mixture till egg gets mixed well. Repeat the process till all the eggs are added. Now add the dry ingredients into the wet ingredients in three batches. Mix till well incorporated.Also add vanilla essence and mix well.
  • In a flour dusted pan, pour the cake batter and bake the cake in a pre-heated oven for 25-30 minutes at 180°C. Once the cake is baked, let it cool completely and serve but I decorated the cake with milk chocolate glaze.
  • Chop the milk chocolate and put it in a deep bowl, add 2 tbsp of butter and melt them on a double boiler setup i.e. boil water in a sauce pan and place the bowl with chopped chocolates and butter over the sauce pan with boiling water and let it melt with the water vapour. Mix well to incorporate the butter and chocolate. Remove it from the heat when completely melted and wipe the bottom of the bowl to remove water droplets.
