SPICY CRISPY FRENCH FRIES/ POTATO FRIES

We all love French Fries. Who doesn’t? Today, French fries are known to almost every kid and elders. What are French Fries? It is nothing extra ordinary but simply deep fried potato fingers. How it became famous in India? Well, thanks to McDonalds and other restaurants serving the French fries. Everyone at my house love French fries but who’s going to spend bucks when one can make these crispy French fries at home. In this blog I’ll be sharing the recipe of spicy version of French fries.

Preparation Time: 2 hours

Cooking Time: 30 minutes

Serves: 06-08

Course: Side Dish/ Snacks

Cuisine: Belgium or France

Ingredients:

Potatoes (Large Size)                                                   1 kg

Water as required

Oil to Fry

Salt to taste

Black salt as required

Red Chili Powder                                                          1 tsp

Black Pepper Powder                                                  ½ tsp

Directions:

  1. Peel the skin of the potatoes and cut it into thick slices. Then again cut the slices into vertical finger sized pieces.
  2. Put the potato fingers in a bowl of cold water and keep it aside for 30 minutes to remove the starch.
  3. After 30 minutes, take the soaked potatoes off the cold water and put it into the hot water. Let the potatoes sit in the hot water for 20 minutes.
  4. After 20 minutes, take out the potatoes and pat dry the excess water with a kitchen towel. Place the potatoes on a tray and deep freeze for 30 minutes.
  5. In a small bowl, mix the red chili powder, black salt, salt, black pepper powder and mix well. Seasoning for the French fries is ready. Keep it aside.
  6. After 30 minutes, heat the oil in a frying pan on high flame. Once the oil is hot, fry the potatoes for 5-10 minutes in batches. I fried the potatoes in two batches. Take out the potatoes on a plate and let it cool completely. When it’s cooled completely, again fry the potatoes on medium-high heat till golden brown. Stir the potatoes continuously to prevent it from burning.
  7. Take out the fried potatoes on a tray lined with tissue paper. Sprinkle the spice seasoning over the fries, mix well and serve hot with ketchup or mayonnaise.

Tips: 1. Frying the potatoes twice makes crispier French fries.

2. One can even store the potatoes to fry later. To store, put the deep frozen potatoes in a zip lock bag and put it into the freezer. It can be stored upto 7 days.

3. Fries can also be seasoned just with salt or salt and black pepper powder and served.
