SPINACH MUSHROOM CORN PASTA IN WHITE SAUCE

It’s been over 2 months since we are facing lockdown due to the pandemic corona virus. Everyone are in their houses all locked up which means we only follow same monotonous routine of EAT-SLEEP-REPEAT. I had been following the same time-table but I tend to eat too much, my mouth keeps on munching every now and then. So to keep my mouth busy I spend a lot of my time in kitchen experimenting while cooking. It was few days earlier when I made Spinach-Mushroom-Corn Pasta in White Sauce. I am sharing the recipe in this blog, hope you all will like my recipe.

Ingredients

  • A.WHITE SAUCE
  • Plain Flour/ Maida: 2 Tbsp

  • Milk: 2 Cups

  • Butter: 4 Tbsp

  • Cheese Slices 1-2

  • Salt as required

  • Black Pepper Powder: 1/2 Tsp

  • B. PASTA
  • Durum Wheat Semolina Penne Pasta: 2 Cups

  • Butter: 1 Tbsp

  • Oil: 1 + 1 Tbsp

  • Chopped Onions: 1/4 Cup

  • Chopped Garlic: 1 Tbsp

  • Chopped Button Mushrooms: 1/2 Cups

  • Spinach : 100 Gram

  • Boiled Sweet Corns: 1/4Cup

  • Dried Italian Mixed Herbs: 1 Tbsp

  • Salt to Taste

  • Water as required

Directions

  • A.WHITE SAUCE
  • Heat butter in a pan, then add the plain flour and saute till the raw smell of the flour is gone. Then add the milk while stirring continuosly to avoid flour lumps. Let the milk come to a boil.
  • Once the milk comes to a boil and starts thickening, add cheese slices and mix well till the cheese melts and dissolves.
  • Season the white sauce with salt and pepper powder. Mix well and keep it aside.
  • B. COOKING THE PASTA
  • Boil water in a pot, once the water starts to roll boil, add the penne pasta to the boiling water and cook the pasta for 9-10 minutes. Season with salt. When cooked, drain off the excess water and sprinkle 1 tbsp of oil. Toss well, this will prevent pasta from sticking to each other. Keep it aside.
  • Heat 1 tbsp of oil in a pan, add butter to the oil, then add the chopped garlic and saute well for few minutes. Then add the chopped onion and saute well. Add chopped mushroom and stir fry for few minutes. Season with salt. Add roughly chopped spinach leaves, saute for sometime. Then add the boiled sweet corns and fry for sometime.
  • To the cooked veggies, add the white sauce. Mix well. Season with mix Italian dry herbs. Add salt if needed. Then add the boiled penne pasta and mix well. Cook for some time and serve hot, garnished with cheese of your choice. I did not add cheese because my sister doesn’t like too cheesy pasta.
