VEGETABLE FRIED RICE

Vegetable Fried Rice is simply a rice dish where boiled rice is cooked with mix vegetables. Veg Fried Rice is a part of every menu and it is popular even in India. Indo-Chinese version of vegetable fried rice is a very popular street food in India which is usually served with various kinds of side dishes like Vegetable Manchurian, Egg Chilli, Chilli Chicken, Chicken Manchurian, etc. I prefer cooking veg fried rice on weekends as it is quick and simple.

Ingredients:

Basmati Rice                                                       1 ½ cups

Carrots                                                                 3-4 large

Beans                                                                   10-15

Capsicum                                                            1 medium

Soya Sauce                                                          ½ tbsp

Pepper Powder                                                   2 tsp

Chopped Garlic                                                   1 tbsp

Chopped Ginger                                        1 tbsp

Green Chilies                                                       2

Spring Onions                                                     ¼ cup

Salt to Taste

Oil as Required

Water as Required

Directions:

  1. Take a liter of water in a pot, add a tsp of salt and bring it to boil. Once the water boils, add the rice to the boiling water. Cook the rice for 10-15 minutes or till the rice grains gets soft. Once cooked, using a colander, rinse of the water and pour cold water over the rice. Keep it aside.
  2. Thoroughly wash the vegetables and pat dry. Peel the carrots and chop them into tiny cubes. Also chop the beans and capsicum. Keep the chopped vegetables aside.
  3. Heat a wok or a frying pan on low flame. Once the pan is heated add 1-2 tbsp of oil, when the oil heats, add the chopped ginger garlic to the oil and sauté for few seconds.
  4. Turn the heat to high flame because the chopped vegetables will be sautéed on high heat as it maintains the crunch of the veggies. First add the carrots and sauté for 2 minutes. Then add the beans, sauté it too for 2 minutes and lastly add the capsicum and sauté it for 1 minute.
  5. Once the veggies are sautéed, add the boiled rice to the cooked veggies. Mix well, don’t mix too much as the rice grains will break. To prevent breaking of rice grains sprinkle few drops of cold water to the rice and toss the rice with veggies or simply use a spatula to mix the rice and veggies.
  6. When the rice and veggies are mixed well, add the salt, pepper powder and soya sauce. Toss and mix till well incorporated.
  7. Cook the rice and veggies on high heat for a minute or two. Garnish with spring onions and serve hot with side dish of your choice like Chicken Manchurian, Egg Chili, Vegetable Manchurian, Chili Chicken etc.
