KADA PRASAD/ AATE KA HALWA


It was before the lockdown, in the month of February I visited a Gurudwara for the first time in my life with my friends. There that day the Gurudwara did not have much visitors. After we finished our prayer we were offered Prasad which looked life halwa but when I tasted, it wasn’t the regular halwa that I have at home. After returning back, I asked my mother what kind of Halwa was that. She told me that its called Kada Prasad or Aate ka Halwa made out of wheat flour and pure ghee seasoned with sugar syrup. I had to try this out. So recently I tried it out and to my surprise it turned out to be tasty in the first go itself.

Ingredients:
Wheat Flour 1/2 cup
Pure Ghee 1/2 cup
Sugar 1/2 cup
Water 1 cup
Chopped Almonds 1/4 cup

Directions:

  1. Heat the water in a sauce pan. Add the sugar into it and heat the water till the sugar dissolves completely. Once the sugar dissolves, simple sugar syrup is done. Keep it aside.
  2. Take deep pan/ kadhai. Heat it on low heat. Once heated, add ghee into the hot pan. Let the ghee heat for 1 minute, then quickly add the wheat flour while stirring continuously. Stir nicely to break any flour lumps.
  3. Cook the flour in the ghee for good 15-20 minutes, till the rawness of the flour is gone and the colour of the flour changes to light or dark brown. Make sure you keep the heat on medium low to prevent it from burning and you must also keep on stirring slowly.
  4. Once the flour changes its colour, add the sugar syrup to it slowly while stirring simultaneously. You will notice that the mixture doubles in quantity. Keep on cooking while stirring till the halwa releases ghee. Once the aate ka halwa/ kada prasad releases ghee, remove it from the heat and serve it hot garnished with chopped almonds.

Tips: (a) You can skip adding nuts or you can add dry fruits of your choice.
(b) If you want to make this halwa for 4-6 people just double the quantity of ingredients used in this recipe.
(c) You can even use simple vegetable oil instead of ghee and add 1/2 tsp of cardamom powder for fragrance.
