VEGETABLE EGG CHOW MEIN


Chow mein is one of the most famous street food of India which is available in all sorts of eateries, be it roadside food stalls or restaurants. There are various options available like Veg Chow mein, Egg Chow mein, Chicken Chow mein and what not. In this blog I’ll be sharing the recipe of Vegetable Egg Chow mein which is our favorite evening snacks.

Ingredients:
Chow 200g
Eggs 2
Carrots 2
Capsicum 1/2
Chopped Cabbage 1 cup
Chopped Onion 1/2 cup
Chopped Garlic 1 tbsp
Slit Green Chilies 2
Soya Sauce 1 tsp
Red Chili Sauce 2 tsp
Green Chili Sauce 1 tsp
Tomato Ketchup 1/2 tbsp
Black Peppercorns 1/2 tbsp
Sugar 1 tsp
Salt to taste
Oil as required
Water 1 liter

Directions:

  1. Boil 1 liter of water in a pot, add a pinch of salt too. Once the water comes to rolling boil, add the chow and cook it for just 3 minutes. Then strain it using a sieve, after 1 minute, add 2 tbsp of oil and toss well to coat the chow well. Tossing in oil prevents it from sticking. Keep the Chow aside.
  2. Wash and peel the carrots and cut them into thin julienne. Keep it aside. Wash the capsicum and cut it into juliennes too. Keep it aside.
  3. In the mortar and pestle, put the black peppercorns and sugar and crush till fine powder is obtained. Keep it aside.
  4. Beat the eggs in a bowl. Heat a frying pan on medium heat, add 2 tbsp of oil and let it heat. Scramble the eggs with sprinkled salt. Keep it aside once the eggs are cooked well.
  5. In the same pan heat 3 tbsp of oil, then on high heat saute the veggies. Start with chopped onions and garlics. Saute them for one minute, then add the carrots and capsicum. Then after 1 minutes, add the cabbage and saute all the veggies well.
  6. Once the veggies are done, add the cooked chow and toss well. Season the chow with pepper sugar powder, salt, soy sauce, red chili sauce, green chili sauce and ketchup. Toss well till everything is mixed well. Toss cook the Chow mein for 5-8 minutes. At the end, garnish with scrambled eggs and serve hot.
