GAJAR KA HALWA/ CARROT HALWA

Gajar ka Halwa or Carrot Halwa is a traditional India sweet dish/ dessert made with freshly grated carrot, milk and sugar. Served hot or cold it tastes incredible. Carrot Halwa has been my favorite, my mother used to make Carrot Halwa during winters and no matter how much I ate I would crave for more. These days I make Carrot Halwa using a little variation in my mom’s recipe. I use Milkmaid sweet condensed milk instead of sugar. One can use usual sugar instead of condensed milk.

Ingredients:

Fresh Carrots                                                      800g

Full Fat Milk                                                        1 Liters

Condensed Milk                                        250g

Cardamom Powder                                            1 tsp

Ghee                                                                    2-3 tbsp

Dry Fruits (Optional)                                          ¼ cup

Directions:

  1. Thoroughly wash the carrots with cold water. Peel the carrots and grate the carrots in a bowl.
  2. Heat a deep pan on medium low heat. Add ghee to the pan and fry grated carrots for 5-10 minutes.
  3. After frying the grated carrots, add the full fat milk to the carrots. Mix well and on low heat cook the carrot in the milk. Keep stirring carrot and milk to prevent it from sticking on the bottom.
  4. We have to cook the carrots and milk till carrots get soft and milk reduces. We have to also remember to cook the halwa on low heat and keep on stirring and mixing in short intervals.
  5. Once the milk reduces and carrot gets soft, add condensed milk to the halwa for sweetness. Mix well till incorporated well.
  6. Before taking it off the heat, add the cardamom powder and mix well.
  7. Take the halwa off the heat and serve hot or cold garnished with chopped dry fruits of your choice or without dry fruits.

Tips: One can also add sugar instead of condensed milk.
