PANEER STUFFED PARATHA


Stuffed Paratha is one of the most famous breakfast option in North India. Stuffed Parathas are loved by most especially when its Aaloo Paratha or Potato Stuffed Paratha. Another variation of stuffed paratha is Paneer Paratha in which spiced paneer is used to make stuffed parathas. In this blog, I’ll be sharing my way of making Paneer Paratha. This recipe is wonderful for breakfast or even snacks

Ingredients:
a) Stuffing:
Paneer/ Cottage cheese 250g
Finely Chopped Onion 1/2 cup
Finely Chopped Green Chilies 1 tbsp
Finely chopped Garlic 1 tbsp
Finely Chopped Ginger 1 tbsp
Carom Seeds 1/2 tsp
Garam Masala 1 tsp
Aam Chur/ Dried Mango Powder 1/2 tsp
Cumin Powder 1 tsp
Red Chili Powder 1/2 tsp
Chopped Coriander leaves 1/4 cup
Salt to Taste
b) For the Dough
Wheat Flour 2 cups
Ghee/ Refined Oil 1/4 cup
Salt to Taste
Water as Required
c) For Cooking the Paratha
Ghee/Butter/Refined Oil 1-1/2 cup

Directions:
A. Dough Making: In a large deep bowl, put the wheat flour in the bowl. Add a pinch of salt to the flour and ghee/oil to the flour. Mix well and slowly add water to the flour and knead into a soft dough. The dough should not be too soft. Cover the dough with a damp cloth and keep it aside.
B. Filling/ Stuffing: Take another bowl and grate the paneer/ cottage cheese into it. Add the chopped onion, chilies, ginger, garlic, coriander leaves and all the spices i.e. carom seed, garam masala, cumin powder, aam chur, red chili powder. Gently give a mix to incorporate everything well. Also add salt to taste and mix well. Keep the filling aside.
C. Filling the Paratha: (1) Take small portions from the dough and make round balls om medium size. Press or pat the ball to get flat disc sized dough, then place it on the surface.
(2) Now take 1 1/2 tbsp of the filling/ stuffing in the center. Bring the edges of the dough together to seal it and form a ball again by gently rolling the dough on your palm. Repeat till all the dough and filling is used.
(3) Take the stuffed dough, dust it with flour and flatten a little and gently roll out flat paratha without exerting too much pressure or else it’ll tear up. Dust the paratha with flour and keep it aside till all the parathas are rolled out.
D. Cooking the Paratha: (1) After all the parathas are rolled out, heat a tawa or flat bottom pan on medium low heat. When the tawa/ pan is heated place one paratha on it, after 15-20 seconds when the paratha from above changes colour, flip it over.
(2) Brush some oil over the flipped side and then flip again after few seconds. Now apply oil to the other side too and cook on both the sides for 3-4 minutes or till the paratha gets golden brown on both the sides. Do the same to cook all the parathas.
Serve the Paneer Parathas hot with seasoned curd or pickle of your choices.
Tips: For a twist one can also try out Cheese Paneer Paratha. In this recipe, add 1- 1/2 cup of grated processed cheese or any cheese or your liking to the filling/ stuffing. Mix well and use the stuffing to make delicious Cheesy Paneer Parathas.
